<p>I&#8217;ve been thinking a lot about salads this week because it&#8217;s <a href="http://www.healthy-endeavors.com/2009/05/05/healthy-eating-may-is-national-salad-month/">National Salad Month</a>which I blogged about a few days ago.  Not that I need a reason to go out a make a salad &#8212; most days it&#8217;s just part of my routine to have one for lunch. But it got me thinking about some simple ways I make salad interesting. For one, I always start with fresh greens, preferably organic. Here in Connecticut, my <a href="http://www.healthy-endeavors.com/2008/10/28/locally-grown-greens-are-the-only-way-to-go/">favorite organic farmer, Perry</a>, grows the most divine greens.  It costs a little extra but it&#8217;s well worth the price for the added flavor and nutrition. And these days you get such a variety that even good old romaine lettuce can seem boring.</p>
<p>I also like to mix up the veggies (and fruit)  &#8211; mostly raw, but sometimes even cooked &#8212; to add texture and variety. One of my favorite things to add? Avocado! The creaminess and flavor can&#8217;t be beat and it contains heart healthy fat. A quarter or half an avocado makes any salad more interesting.</p>
