<p>Clean eating inspiration for fall starts with a quick spin around your local farmers&#8217; market where you can see plentiful amounts of beautiful winter squash &#8211; butternut, acorn and pumpkin. Not to mention potatoes and sweet potatoes and lots of greens. For me, it&#8217;s the perfect opportunity to turn my sights and creative energy to making healthy fall creations.</p>
<p>The key here to is eat what&#8217;s in season, focus on clean eating that shuns processed foods full of sugar, salt and fat and to have some fun with it.  A little meal planning on a Saturday morning can yield a week&#8217;s worth of healthy, seasonal clean eating meals that won&#8217;t have to keep you in the kitchen for hours. Just today, I&#8217;ve cooked up a healthy soup with collard greens, beans and sweet potatoes, fresh tuna burgers and some delicious Jamaican style oatmeal.  All clean meals full of nutrients and flavor.</p>

Needless to say some of that time was certainly in relationships, but more time than not was spent trying to figure out how to get and stay enthused about cooking for myself.</p>
<p>And it&#8217;s not that I didn&#8217;t like to cook &#8212; I definitely loved the result. It was that it took a lot of time and effort to create meals that I&#8217;d often end up eating by myself.  It just wasn&#8217;t nearly as interesting or fulfilling going through the motions in order to get to the tasty end result so you can probably guess that I didn&#8217;t always go the extra mile in the kitchen.</p>
<p>And now that I&#8217;m married it still doesn&#8217;t mean that I always love the process of cooking when I&#8217;m so busy although the fun of eating together is great. Some days I simply have lots to do and despite my best meal planning efforts, I don&#8217;t always come out of it feeling joyous (although in the end it&#8217;s usually healthy).</p>
<p>So I thought it would be great to do my free monthly teleclass on some simple ways to make meal planning and food prep a whole lot more fun, especially if you&#8217;re single.  But even if you&#8217;re not you can come away with easy ideas for making the whole process less cumbersome, more fun and healthy too. And here&#8217;s a hint about the secret ingredient to make going solo more fun: building community.</p>

<p>I grew up in a family where my mom&#8217;s major work, when I was younger, was serving on a variety of community boards and in various volunteer capacities in our suburban New Jersey town. Everything from the YWCA to the United Way, not to mention being my girl scout leader, my brother&#8217;s cub scout leader and a host of other things in between.</p>
<p>It was just pretty much understood (and demonstrated) that part of being a good citizen is about giving back. I also learned a lot about not only donating your time but also making financial contributions to organizations that create value in the community.</p>
<p>Over the years I&#8217;ve been involved in numerous community organizations focused on a broad range of issues &#8211; from the arts (indulging my creative side) to women&#8217;s issues (domestic violence and sexual assault) to mentoring young women.  But none has been more personally meaningful and fulfilling than what I now spend my volunteer time doing.</p>
<p>I&#8217;m pleased and proud to be o<a href="http://www.healthy-endeavors.com/wp-content/uploads/2008/10/000_02731.JPG" title="000_02731.JPG"><img align="left" width="221" src="http://www.healthy-endeavors.com/wp-content/uploads/2008/10/000_02731.JPG" alt="000_02731.JPG" height="291" style="width: 221px; height: 291px" /></a>n the board of <a href="http://nhep.com">Common Ground HS and the New Haven Ecology Project</a>. Common Ground is a charter high school in New Haven that has an environmental focus.  It&#8217;s an urban oasis in the middle of the city, boasting a beautiful, organic farm that helps feed the kids (that alone is simply fantastic in this age of too much junk food!), a unique eco-curriculum with small classes and some of the most amazing teachers you can find.  But that can barely shake a stick at the fantastic and diverse students that the school attracts.  They&#8217;re bright, talented, savvy and oh so ready to use the Common Ground environment as their lab.</p>
<p><a href="http://www.healthy-endeavors.com/wp-content/uploads/2008/10/000_02731.JPG" title="000_02731.JPG"></a>I joined the board about a year and a half ago on the prodding of my friend Frank, the board chair.  In addition to my board responsibilities, I love spending time educating students and parents about healthy living &#8211; everything from good nutrition to stress reduction. I&#8217;ve had big fun working with my friend Alexis, the gym teacher (and all around amazing woman &#8212; that&#8217;s Alexis, my husband Bruce and I at the fundraiser). So this past weekend I happily participated in an awesome fundraiser that we held, Feast From the Fields (imagine a yummy menu of locally grown food from local farmers and our garden).  I was pleased to come early to help with set up, welcome guests and make a healthy contribution to the silent auction (a seat in my meal planning class and a health coaching session). The event attracted lots of wonderful people for an evening to raise funds for the school, so it can keep doing what it does best.</p>
<p>But of all the highlights of the night, what was most gratifying was seeing some of the Common Ground students who volunteered their time, got dressed up and were the wait staff (that&#8217;s them in the photo at the top) &#8211; just as poised and mature as could be. They got to participate in the event, add value and give back.</p>
<p>Which just goes to show that we all have a role we can play in making a difference in our school, community or favorite organization, no matter what our age. And when we can help people be healthy and productive, it&#8217;s even better!</p>

And imagine if you could feed your family only the highest quality products that are bursting with flavor and have optimal nutritional value.In fact, Community Supported Agriculture (CSA) makes it possible. CSAs combine the best of both worlds &#8211; you have the opportunity to buy the freshest quality produce while also supporting local farmers, guaranteeing them a market for their seasonal produce.</p>
<p>Here’s how it works: after locating a local CSA in the spring, you sign up to receive a weekly “share” of fresh, often organic, produce throughout the harvest season. Unlike what we often purchase at the grocery store that may have been picked weeks ago, CSAs provide a mix of vegetables, herbs and even flowers, so you get produce that’s picked at its peak, loaded with essential vitamins and minerals.</p>
<p>Depending upon the CSA, you either pick it up from the farm, or in some cases, it’s delivered right to your doorstep. Either way, you also have the added benefits of buying produce at a fair price, supporting the local economy and getting more in tune with eating seasonally.</p>
