		<description>here&#039;s a great recipe for a clean vegetarian meal that I just made this week:
Chickpea Coconut Curry
1 cup each chopped carrots, celery, onions and greens (I used collard greens)
2-3 cloves fresh garlic
2 Tb olive oil or smart balance
1 can low sodium vegetable broth
1 can lite coconut milk
4 small red potatoes
1 can chickpeas, drained and rinsed
1 can water
1 tb garam masala
1-2 tsp sea salt

All you do is heat the oil in a big pot and stir fry the vegetables until they&#039;re nice and soft, then add the broth, coconut milk, water, potatoes, garam masala and salt and boil until the potatoes are soft, then add the chickpeas and heat through.  So yummy with a dollop of yogurt and naan or a whole wheat tortilla.  

Hope you try the recipe out- you won&#039;t be dissapointed!</description>
