The cost issue always boggled my mind. Pop and potato chips cost a lot, but people don't want to spend an extra buck on a good healthy meal?

Personally, I hate the chemical taste in packaged foods. We rarely eat anything packaged. My can opener was my mother's. I use so few cans that it never seemed necessary to buy a new one!

I'm adding more new recipes to my site today and it's making me really hungry. You're skinny like I am. Good food is definitely the way to go!

Think we might know what we're talking about guys?

Wendy,
I SO appreciate your message - healthy eating saves money in the long run and makes your life so much better in every way.

Not only was the cost of your lunch only $2.71, but the meal prep did not take that much time - most of the ingredients you listed are all conveniently canned or frozen.

Great post! For meal planning, I'd recommend taking a look at Springpad which is an online personal organizer to make your life easier. One of its more useful applications is a free online recipe box to collect, find, and share any recipe from any website. You can then easily take any recipes you like from your collection and put them into Springpad's weekly meal planner which automatically generates a shopping list based on the ingredients. Check it out at http://springpadit.com/food
