Clean Eating Makes Meal Time Simple & Healthy
One thing I know for sure is that when you eat whole, clean and super healthy foods you shouldn’t be in the kitchen for hours!
Yesterday is a perfect example. Bruce and I stopped by a brand new farmers’ market not far from our house. It was an adventure is meeting new farmers and all kinds of treats — like the chocolate black bean ice cream I sampled ( it was so good!). I saw the farm where I got my flowers for the wedding, a farm that has grass-fed meat and wild salmon and we even saw the “Soup Girl” who sells homemade and healthy soups. And the variety of fresh produce was just breathtaking — locally grown, organic, freshly picked and FULL of flavor and all the right nutrients. In my book, it just doesn’t get better than this.
After perusing all the booths, as I always love to do, I settled on a super simple lunch — fresh corn just picked that morning and heirloom tomatoes. We took some basil from our garden, sliced up the tomatoes and drizzled them with olive oil. In less than 15 minutes, we had ourselves a healthy and light lunch full of nutrients and fresh as could be. And in keeping with our hot summer weather, we ate light but yet it was satisfying. A fruit and veggie smoothie as we did laundry and cleaned the house rounded out our afternoon meal.

Wendy – Had fresh corn and tomatoes in our house this week, too. I could eat that combination everyday in the summer months when the corn and tomatoes are in their prime season. I grew up on southern eating, though. I didn’t have basil with my tomatoes…just a little pepper. Thanks for keeping us focused on clean eating! Juie

That sounds really delicious, I am going to try that. I have one question though. I am not trying to lose weight I am just trying to eat healthier. I am worried eating like this I am going to lose weight, do you have any pointers?
