Clean and Healthy Eating: Mango Salsa

When I was making up last week’s meal plan, I had the idea of fish tacos with mango salsa. I’ve never made mango salsa before, but it sure seems pretty simple  — a few ingredients, and voila, you’ve got mango salsa. So I checked out a few recipes for ideas and then put together a combination of ingredients I thought would go well. I like it because it’s all natural, no added sugar, fresh ingredients, some even locally grown.

And you know what else, you can use this with a variety of dishes. So you can make a batch and then use it for several days. And of course, there’s always the old stand by of using with chips.  To me, it’s the perfect example of clean eating.

The beauty is that this recipe is so super simple and took no more than 10 minutes. I used a beautiful sweet and ripe heirloom tomato that I picked up at the farmers’ market on Sunday.  I will say I cheated a bit and bought pre-cut mango at the store (and payed a ridiculous price, I might add) because the mango I had wasn’t ripe enough and I had my heart set on making that dish on Sunday.  So the mango wasn’t nearly as good as if I had peeled and cut it myself, but it sufficed.

Mango Salsa

Ingredients:

1 mango, diced in 1/4″ cubes
1 ripe tomato, chopped
1/4 cup fresh cilantro
2 tbsp. fresh lime juice

Simply combine all ingredients to make the salsa — yum! It was delicious with the tilapia, adding great flavor. I can see adding it over grilled chicken too. And it was even better after a few days.
