Healthy Living: My Favorite Kitchen Resources!
I’m a big fan of finding inspiration in the kitchen to keep us coming back and making healthy meals. What’s worse than feeling like cooking and eating healthfully has to be a burden? The truth is, with a little effort, we all have the potential to make healthy changes that can stick. A few more greens here and more whole grains there and next thing you know, you have boundless energy!
But isn’t it easy to get in a cooking rut sometimes? To look at your myriad of cookbooks and still be out of good ideas? That’s why I’m such a big fan of mixing it up and trying new things to keep it interesting.
I’ve gathered together a few of my favorite resources — cookbooks and reference tools that I think you’ll like and enjoy. Two of them are perfect for this time of year with all our warm weather — a focus on raw foods that are so good and energizing.

Made a casserole yesterday:
In olive oil, sautee onions, shallots, mushrooms.
Add artichoke hearts, olives, shredded carrots, pineapple pieces and boneless chicken in small pieces.
Shred romano cheese. Mix and place in casserole pan. Heat at 450 until melted.
An excellent meal that you may enjoy alone or compliment with rice or pasta.
