Healthy Eating: Sensational Spring Salads

foodblogga_strawberry_saladGrowing up it seems like a salad consisted of iceberg lettuce, cucumber and tomato with some store bought Wishbone dressing — boring, boring boring.  But that was then, and now the sky’s the limit when it comes to creating healthy and delicious salads that taste great.

I’ve been thinking a lot about salads this week because it’s National Salad Monthwhich I blogged about a few days ago.  Not that I need a reason to go out a make a salad — most days it’s just part of my routine to have one for lunch. But it got me thinking about some simple ways I make salad interesting. For one, I always start with fresh greens, preferably organic. Here in Connecticut, my favorite organic farmer, Perry, grows the most divine greens.  It costs a little extra but it’s well worth the price for the added flavor and nutrition. And these days you get such a variety that even good old romaine lettuce can seem boring.

I also like to mix up the veggies (and fruit)  – mostly raw, but sometimes even cooked — to add texture and variety. One of my favorite things to add? Avocado! The creaminess and flavor can’t be beat and it contains heart healthy fat. A quarter or half an avocado makes any salad more interesting.

Check out this week’s video for some fun ideas and inspiration to make your spring salads simply sensational.

What do you do to make your salads more interesting? What are some of your favorite ingredients to add?

  1. I love raisins and sunflower seeds in my salad it gives it so much flavor!

  2. Wendy, do tell: Where do you go for the farmers’ market weekly?
    Thanks!

  3. I’m loving the raisins and sunflower seeds, good idea.

Melanie, the farmers’ market is called City Seed. Check out http://www.cityseed.org. It should be starting up again in a few weeks. :)

  4. I like to add pear slices to a salad. We’ve been working through a big bag of pumpkin seeds at home, so those get added to a lot of salads as well. And last night (and again tonight) we’ll add fresh pea shoots, which really add a bright flavor and crispness to the salad.

  5. Wendy,

I love mixing both vegetables and fruits in my salads..its like have your own little salad bar at home…

  6. Ladies, such nice ideas for jazzing up our salads. Pumpkin seeds and pea shoots? Yum!
