Kick Start Spring with Fresh Raw Kale

I’ve often heard of it referred to as the number 1 vegetable to fight cancer and with good reason, it’s a powerful antioxidant containing copious amounts of Vitamins A, C, and E, potassium, iron and calcium, just to name a few.

Low on energy? Kale to the rescue. Its power-packed nutrients will have you buzzing in no time and in an all natural way – no caffeine needed!

Kale is even more beneficial for us when eaten raw, allowing you to get the full benefit of the nutrients that aren’t lost in the cooking process. Whether in a smoothie (yes, I put kale in smoothies!) or raw in a salad or even in your wrap, instead of lettuce, it will powerfully help protect your health.

Raw Kale Salad

Ingredients:

1 bunch organic kale
zest of one lemon, minced
juice of one lemon
salt to taste
1 tbsp. pine nuts
1 tbsp. raisins

Directions:

1. Wash kale and cut into bite size pieces
2. Add the lemon zest and lemon juice to the kale and marinate for 10 minutes.
3. Add salt, nuts and raisins.
4. Serve and enjoy!
