Eat Healthy: The Mighty Tomato

I love the simple pleasures of life, and one of my favorites is the taste of a juicy, perfectly ripe tomato that I’ve bought from the farmers’ market. And each week I go, I see more and more varieties of tomatoes as they’re being harvested. I know you can imagine why I’m so excited, because you know how it is during the winter months when all you can find in the grocery store are tasteless tomatoes!
Just like I love watermelon during the summer, I feel the same way about tomatoes. Biting into one just makes me feel good…and healthy too. Which is another thing I love about tomatoes - they’re so good for us! Talk about supporting our health - they’re low in fat, low in calories and provide a host of preventative benefits.

How do you use tomatoes and what are some of your favorite tomato dishes? Several years ago I found a recipe in Real Simple magazine for roasted tomatoes with shrimp and feta cheese. It is simply delicious with fresh, native tomatoes. It’s so good Bruce asks me all summer when we’re having more of it. We haven’t made it yet, but it’s on the meal plan for the next few weeks.
